This Roasted Chickpeas Recipe Rocks! Add Curry – And It’s Bombastic!
I get this questions all the time every time I offer these crunchy chickpeas as a delicious snack to my guests. HOT TO roast and prepare these naturally delicious legumes for a feast to enjoy with family and friends.
My chickpeas healthy snack is oven roasted. I use canned garbanzo beans, – the other name for chickpeas, – patted dry, then coated in virgin olive oil and spices.
In just twenty minutes, you can receive the best healthy baked snack ever!
Vary the seasonings of your choice on this roasted chickpeas recipe. Add smoked paprika, dried herbs, cayenne pepper or other spices. These crunchy chickpeas are best when eaten hot out of the oven! A perfect movie snack indeed.

Crunchy, spicy roasted chickpeas are high in fiber and cancer-preventive compounds from curry. These are fairly spicy, so adjust the curry powder as needed for your own personal taste.
Vary the seasonings as you'd like; add smoked paprika, dried herbs, cayenne pepper or other spices.
These are best eaten hot out of the oven; if you find they get soft after storing, pop them in the oven for 5 to 10 minutes to restore crispiness.
Ingredients
- 2 cans chickpeas, drained and rinsed well
- 4 tablespoons olive oil
- 2 teaspoons curry powder
- 1 teaspoon garlic salt
- 1 teaspoon black pepper
Instructions
- Preheat oven to 400 degrees. Pat chickpeas dry and drain on several layers of paper towels until completely dry.
- Transfer chickpeas to a large bowl and add olive oil, curry powder, garlic salt and black pepper. Stir to mix well. Spread in a single layer on two large baking sheets and roast for 10 minutes. Rotate pans, stir chickpeas and cook for 10 to 15 minutes longer, until lightly browned and crunchy.
- Remove from oven and let cool completely. Serve immediately, or store in an air-tight container.
