I have quite a few cookie recipes that I make during the Holiday Season. However this easy and chewy caramel cookies recipe is on the top of my list. When I decide which cookies will be baked and made first for my cookie exchange parties, teachers gifts, neighbor gifts – this homemade recipe always wins.
Even my cat has agreed that these cookies are the best so far. She came to keep me company during my taking pictures of the cookies. I just adore this photo (cat parents will understand.)

Holiday Season Edition of M&M’s With Chewy Caramel
You may rejoice that this recipe can take any of your favorite fillings like chocolate chip cookies, caramel bits, M&M’s, raisins, and oats.
What I love doing during the Holiday Season is to add some color: greens and reds and whites. The Holiday Edition of M&M’s is a perfect match to this recipe.

If you like cookies, you may adore these robin egg blue speckled cookies for birthdays or Easter or any other occasion.
Add Salt on Top of the Cookies If You Wish
One of my friends adds a bit of coarse salt into the recipe of these homemade caramel cookies. The salt does not melt and adds that unique and craved flavor to the caramel bits.

Another suggestion to the decoration of these most demanded in my household cookie recipe is that you can change the dressing. I used powered sugar. You can use glaze, melted caramel strips or chocolate drizzle. Whatever your sweet tooth desires – give it to it!

These not-too-sweet cookies are loaded with caramel chips. Melted during the baking, caramel adds a nice softness to each cookie. Brown sugar flavor with chewy caramel is a superb combo for my palate!

Chewy Caramel Cookies
These soft and chewy caramel cookies can be made and baked from scratch. Ready in 30 minutes.
Ingredients
- ¾ cup butter room temperature
- ¾ cup brown sugar
- ½ cup light corn syrup
- 1 egg
- 2 tsp vanilla extract
- 2.5 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup toffee bits like in Heath Bits O'Brickle
- 1 cup M&M Green and Red Holiday Edition
- Powdered sugar for decoration
Instructions

Preheat oven to 350F. Grease cookie sheets well with butter or ghee.

In a large bowl, beat up butter and sugar.

Add to the bowl Light Corn Syrup, egg, baking soda, salt, vanilla extract – continue to beat this mixture up incorporating ingredients into the recipe.

Add gradually flour to the bowl as you are carefully incorporating it into the liquid ingredients.

As a final step, add your toffee bits and M&M's. Mix well.

Using a tablespoon, scoop up some dough, roll between the palms of your hands, and carefully press the ball into a flat cookie. Do not make it too thin, though.

Fill the cookie sheet with raw cookies, place them into the heated oven, cook for about 12-14 minutes.

FYI: Your cookies will be light in color when ready.

Cook the cookies on a wire rack.

Use powdered sugar to decorate the cooled cookies.
