Green Bean And Potato Curry Recipe
- 2 Cups halved small Potatoes
- 1 Cup Cherry Tomatoes
- 1 Lb Green Beans (trimmed)
- 2 Tbsp Grapeseed Oil
- 1 Tbsp finely chopped Ginger
- 1 Tbsp Cumin Seed
- 1 Tbsp Garman Masala
- 1 Tsp ground Cardamom
- 1 Tsp ground Turmeric
- 1/2 Cup water
- Salt to taste
- 1/2 Cup plain Greek Yogurt
- Heat the oil in a skillet over Med/High heat. When the oil is hot add the ginger and cook for 15 seconds.
- Add the cumin seeds, garam masala, and cardamom and cook for 10 seconds.
- Add the potatoes, tomatoes, turmeric, salt, and water, bring to a boil then reduce heat to medium and cover the skillet with a lid.
- Simmer, stirring regularly, until potatoes are almost done. (about 9 minutes)
- Add the beans to the skillet and cook until tender (about 5 minutes), add in your yogurt an stir well.
