- 4 bell peppers, roasted (I used red and yellow in this recipe)
- 5-6 plum tomatoes (the ones that are cherry-size)
- 1 cup raw almonds
- 1/4 cup fresh parsley leaves
- 2 gloves garlic
- 1/2 Tbsp virgin oil olive
- 1 tsp salt
- Juice of 1/2 lemon
- 1. Blend all ingredients in the food processor until you reach a smooth texture, the one you are happy with. Some people like it more liquidy, some like it more with tiny chunks.
- 2. Serve hot or cold with the dish of your liking: pasta, fish, eggs, potatoes. Sometimes, we use it in a sandwich!

I like Romesco Sauce because It’s a Spanish sauce made with red peppers and various nuts (usually almonds and hazelnuts). It also commonly includes tomatoes, garlic, onion, red wine vinegar… a few other ingredients and thickeners.
