Soft candy needs to be stored away from direct light and heat and could be enjoyed in the next six months after your little goblins have collected and brought a ton of candy home.
The candy corn has been in circulation since around 1900s. Manufactured by the Jelly Belly Candy Company, candy corn is made of sugar, corn syrup and marshmallow.
Based on the reports by the National Confectioners Association, more than 35 million pounds of candy corn sweets were produced in 2005. Can you guess how many kernels could be found in those 35 Mil pounds? – 9 Billion!

Ingredients
- 1.5 cups (181g) all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1/4 tsp baking soda
- 1/2 cup (1 stick/113g) unsalted butter, softened
- 1 cup (217g) brown sugar
- 1 tsp vanilla extract
- 2 large eggs
- 2/3 cup (160ml) buttermilk
- 2 cups (120g) Granny Smith green apples, spiralized
- 1/2 cup (57g) coarsely chopped walnuts
- Cream Cheese Maple Frosting, see below
- 6 oz (170g) cream cheese, softened
- 3 Tbsp (42g) unsalted butter, softened
- 1/2 tsp vanilla extract
- 1/8 tsp maple extract
- 1/8 tsp ground cinnamon
- 1/8 tsp ground ginger
- Pinch of freshly grated nutmeg
- Pinch of slat
- 1 cup (115g) confectioners' sugar, sifted
Instructions
- Preheat oven to 350F. Grease the bottom and sides of a 9-inch square baking pan. Dust the pan with flour.
- In a medium bowl, whisk together the flour, baking powder, cinnamon cloves, ginger, baking soda, and salt. Set aside.
- In the bowl of an electric mixer, using paddle attachment, beat the butter at medium speed until cream (about 1 minute). Gradually add the sugar and beat until well blended (2 minutes). add the vanilla extract, then add the eggs one at a time.
- Reduce the speed to low an add the flour mixture and buttermilk.
- Remove the bowl from the mixer stand and stir in the apples and walnuts.
- In the bowl of an electric mixer, using the paddle attachment, beat together the cream cheese and butter at medium speed until smooth.
- Beat in the vanilla and maple extracts, spices, and salt.
- Reduce the speed to low, add the confectioners' sugar, and beat until well blended. Raise the speed to high and beat until light and creamy (apprx. 2 minutes)
