Breakfast is one of the powerful moments in our daily life. Don’t laugh! You know it’s true. What we put into our bodies will determine how energetic we are during the day. Blood sugar cycle usually begins in the morning, presuming you were good with your food intake the day before.
It is of importance to the body to kick off the day with the foods that will sustain your energy level through the lunch time. That means we need to have some good balance of carbohydrates and protein. Pancakes won’t cut it, unless they have a huge amount of fiber. But things like puddings can!
This Chia Mango Coconut Pudding is rich in protein, fiber, amino acids and a great number of minerals and phytonutrients and fats to take our body performance to the highest level. Take a look what’s inside!
I love pumpkin seeds and freshly cut mango. Basil –
I just add it to create a mood to enjoy this pudding.
Just half of this glass is enough to feed your body
through the lunch time!
This is the same pudding in a ramekin to show off the fruit pieces
and pumpkin seeds more lavishly.
Ingredients
- 1/4 cup chia seeds
- 1 cup light coconut milk
- 1 tablespoon honey or agave
Instructions
- Mix chia seeds, coconut milk, and honey together in a small bowl or glass mason jar. Let it set in refrigerator overnight.

Bill,
As a variation, use a different base for pudding: rice milk, almond milk, hemp milk. All are great and will be customized to your tastebuds.
That pudding sounds so good. I am not big on breakfast in the morning, so this is nice and light, which makes it perfect for me.
Robin,
You can have it as a snack!
When I make this recipe, it is more than enough for me and my hubby. I have it in AM, and sometimes at lunch. It is really filling.
I just needed new ideas for breakfast and this Chia Mango Coconut Pudding sounds like something I have to try! Thanks for the recipe!
Leelo,
It is one easy idea that you can customize with your choice of fruit, berries, and different milk base: rice and almond and hemp milk options.
I would enjoy this combination for breakfast. My problems is the rest of the family doesn’t care of coconut. I would have to find something else to substitute for the coconut. Any suggestions.
Candy,
Yes, there are plenty of other ways to soak those yummy seeds! Use rice or almond milk, hemp milk could be an excellent base as it is full of Omega-3 fatty acids.
I would not recommend soy milk, as it is estrogen-full, and for many, when consumed frequently, it could be a contributor to weight gain.
Chia seeds have a lot of protein.I make my oatmeal something like this recipe.I buy fruit on sale REAL cheap, wash it,let it dry for a bit,bag it,and throw it in the freezer. That way I have good fruit to put in my oatmeal mixture.
Sophia,
Excellent! I have fruit pieces and berries frozen at all times, so it is a no brainer for me to use it in my recipes when needed.
This is such a unique dish. I’d love to try it. Thanks for posting!
Christy,
You will be surprised at the ease of making it!
Just pour and place in the fridge to decorate with fruit and berries of choice the next day!
