Easy Chia Mango Coconut Pudding
Ingredients
- 1/4 cup chia seeds
- 1 cup light coconut milk
- 1 Tbsp agave or honey
Instructions

Mix chia seeds, coconut milk, and honey together in a small bowl or glass mason jar. Let this mixture set in the refrigerator overnight.

Remove a pudding from the fridge. Make sure your pudding looks thick, and the chia seeds have gelled.

Top with fresh fruit, seeds or/and nuts, and enjoy immediately.

As a variation, use a different base for pudding: rice milk, almond milk, hemp milk. All are great and will be customized to your tastebuds.

I would enjoy this combination for breakfast. My problems is the rest of the family doesn’t care of coconut. I would have to find something else to substitute for the coconut. Any suggestions.

Yes, there are plenty of other ways to soak those yummy seeds! Use rice or almond milk, hemp milk could be an excellent base as it is full of Omega-3 fatty acids.
I would not recommend soy milk, as it is estrogen-full, and for many, when consumed frequently, it could be a contributor to weight gain.
Chia seeds have a lot of protein.I make my oatmeal something like this recipe.I buy fruit on sale REAL cheap,wash it,let it dry for a bit,bag it,and throw it in the freezer.That way I have good fruit to put in my oatmeal mixture.
