Benefits of the Chocolate Lentil Cake

Double Chocolate Beet and Lentil Cake

  • 2-4 (1.5 lb/650 g) large beets (roasted or boiled, peeled and quartered )
  • ¾ cup (175 ml) cooked or canned green lentils (drained and rinsed)
  • 2 cups (500 ml) all purpose flour
  • ½ cup (125 ml) cocoa powder

  • 2 tsp (10 ml) baking soda
  • ¾ tsp (3 ml) sea salt
  • 2 large eggs (room temperature)
  • 1 cup (250 ml) olive oil
  • 1-â…“ cup (325 ml) maple syrup
  • â…“ cup (75 ml) strong coffee (cooled)
  • ¼ cup (60 ml) buttermilk (shaken)
  • 1 cup (250 ml) dark chocolate (coarsely chopped)
  1. Preheat oven to 350F (180C). Line 9×13 inch (22×33 cm) baking dish with parchment paper and lightly grease with olive oil.

  2. Combine in the bowl of a food processor, peeled beets and lentils. Process until smooth, scraping down sides of the bowl once or twice. You should be left with about 2 cups (500 ml) of beet and lentil puree.

  3. Sift together flour, cocoa, baking soda, and salt in a large mixing bowl.

  4. Beat eggs in the bowl of a stand mixer until frothy, about 1 minute. Beat in olive oil and maple syrup until glossy, another 2 minutes.

  5. Beat in coffee, vanilla, and beet/lentil puree until incorporated, scraping down the sides of the bowl.

  6. Add the dry ingredients on low speed until incorporated. Pour in buttermilk and chopped chocolate. Gently mix.

  7. Scrape into prepared baking dish. Bake for 35-45 minutes until wooden toothpick comes out clean. Cool on baking rack. Then cut into squares.

      Lentils are full of FIBER! Adding fiber to a dessert is something not many recipes do!
      And you will never know lentils are there! The chocolate, vanilla, cocoa – all that brings up an amazing flavor of real chocolate.

      1. Using flour alone would add unhealthy starch to the dessert! Fast sugars, that’s the name for that starch, the ones that spikes blood sugar in the body and leads to obesity and chronic diseases.
        The starches that are found in beans like lentils and veggies are the ones that are slow sugars. Eat more of them. You life will change for the better!
        Adding ingredients like lentils into your recipes won’t bring the taste to a detrimental effect, i.e., that nobody will like the taste. Lentils blend easily with other ingredients and take on the flavor of chocolate, vanilla and other goodies you add to your recipe.
        Try it. You’ll never go back.
        I use lentils in pancakes, too!

      This cake is an adventure! Not a bit it is bitter! Cocoa and coffee are there to bring up that chocolaty taste that comes from chocolate bits.
      Maple syrup sweetens the whole deal!

      The cocoa powder, chocolate, vanilla extract make it taste like… CHOCOLATE Cake! It is delicious! No hint on the taste of lentils or beets. These 2 ingredients are used to take place of the flour to lower the glycemic index of the dessert and make it healthier.
      I have done these cakes for the parties without telling anybody what’s inside. The entire cake is gone in no time!

      Leave out the chocolate pieces, though the dark chocolate I use has very low glycemic index, as it is NOT loaded with sugar.
      Use the Cocoa powder as it does not have any sugar, just antioxidants.
      Substitute maple syrup for Coconut Sugar, which is low in Glycemic Index.
