Southwestern Chicken Poppers

I find that deliciousness can be created within a few minutes. It does count when we are pressed for time or short in some ingredients. These Southwestern Chicken Poppers are easy to make and use the simple ingredients from our pantries. Feel free to experiment with taste, spices and herbs – make it your own recipe you and your company will enjoy and ask for more!
Bean, spinach, peppers – all have amazing properties to feed our bodies with fiber and phytonutrients. These poppers can be prepared ahead of a party and frozen for future. I make them in big quantities and freeze to quickly pop into the oven and make a snack out of it!
- 1 Cup Black Beans
- 1 Cup Roasted Corn or Canned
- 1/2 Cup Chicken, cut in small pieces
- 1/2 Cup Jack Cheese or Triple Cheese Mix, Grated
- 1 Cup Spinach raw, cut in smaller pieces
- 2 Tbsp Jalapeno Peppers, finely cut
- 1 Cup of Tricolor Tortilla Chips, crushed for coating the poppers
- Butter or Olive Oil for sauteing
- 1. Combine beans, corn, chicken, jalapeno peppers in a pan and saute the mix for about 4-5 minutes in butter or your choice of olive oil. Add spinach in the last minute of sauteing.
- 2. Allow the sauted mix to cool in a bowl. Add grated cheese. Mix well.
- 3. Form small balls and coat them in the tricolor tortilla chips.
- 4. Place freshly made poppers onto a baking sheet and bake at 375F in the oven for about 15 minutes.
- 5. Remove from oven and cool for a few minutes.
- 6. Serve with your favorite salsas, dips and sauces.

This is the perfect dish to serve to my son who is very picky. He loves chicken but he hardly eats vegetables so this is the best way to hide those spinach in there. 🙂 Thanks for the recipe.
