Radicchio And Grilled Cheese Salad Recipe

6 slices white sandwich loaf bread, without crust
3 oz melted butter
1/2 lb goat cheese
2 eggs, lightly beaten with 1 teablespoon milk
1 cup breadcrumbs
Extra virgin olive oil
1/3 cup extra virgin olive oil
2 Tbsp white vinegar
1/2 tsp sugar
1/2 tsp grainy mustard
1 Tbsp chopped chives
• Brush the bread with butter; dice and place in a baking pan. Toast in the oven at medium heart for about 10 minutes and set aside.
• Prepare the goat cheese. Cut the cheese in pieces and dip in flour, egg mixture and breadcrumbs. Place in a wide container, cover with plastic film and refrigerate for 1 hour.
• Prepare the vinaigrette. Put all the vinaigrette ingredients in a jar, cover and shake well. Set aside.
• Place the greens and croutons in a salad bowl. Grill the cheese in hot pan. Add to the salad. Sprinkle vinaigrette. Your salad is ready to be served!
