Mango Crisp Crumble Pie

This Mango Crisp Crumble Pie is easy to bake. Mangos are rich in protective antioxidants, vitamin C and fiber. This crumble pie is topped with nuts and seeds, instead of grains, for extra nutrition and cancer-preventive compounds.

Ingredients

  • 3 large mangos peeled and sliced (can substitute with 3 cups of frozen mango cubes)
  • 1 Tbsp arrowroot powder
  • 1 Tbsp Manuka honey (can substitute for any other honey in your pantry, but Manuka is more delicious)
  • 2 tsp vanilla extract organic
  • ½ cup almonds chopped
  • ½ cup pecans chopped
  • ¼ cup ground flaxseed organic
  • 5 large pitted dates organic

Instructions

  1. Preheat oven to 350 degrees.

  2. Lightly coat an 8x8 glass baking dish with coconut oil or sunflower oil.

  3. In a large bowl, combine mango, arrowroot powder, honey and vanilla. Toss to mix well. Spread in the bottom of baking dish.

  4. In a food processor, combine almonds, pecans, flax seed and dates. Process mixture until about the consistency of coarse cornmeal. Spread evenly over mangos.

  5. Bake for 20 to 25 minutes until bubbly and golden.

  6. Serve immediately as is or with homemade whipped cream.
