Ingredients

  • 2 cups baby carrots lightly cooked and cooled
  • 1 1-inch piece peeled and grated ginger root, or to taste
  • 2 cups plain or vanilla low-fat yogurt
  • Manuka honey or other sweetener to taste optional

Instructions

  1. Combine carrots, ginger, yogurt and honey, if using, in a blender; puree until smooth and creamy.

  2. Divide between two glasses and serve immediately. Or transfer to a quart jar with a tight-fitting lid and store in the refrigerator. Shake well before serving.
