Let’s give a callout to some of the possibilities within your zucchini noodles recipe. Whether you are a vegan or a vegetarian or a carnivore, you can and should benefit from cooking your own zucchini noodles. The base for all of these recipe variations remains the same – the raw spiralized zucchini noodles.
Spaghetti Tomato Sauce – This is one of my favorites. I either make my own spaghetti tomato sauce or warm up the one I get from the store. I really love a hot tomato sauce on top of my zucchini noodles!
Zucchini Noodles with Pesto – There’s nothing more delicious than a freshly prepared pesto! I use a lot of fresh basil from my own garden and add some garlic and walnuts to get a nice texture. If you care about your skin, anti-aging properties of a pesto sauce will only add to your arsenal to fight free radicals and add Vitamin C for tighter and more elastic skin. Also check out some of the best pesto recipe collections ever! From a Vietnamese to Mediterranean to Pesto Verde with many variations of ingredients. But what stays permanent is the taste, delicious and unique.
Pesto Parmesan Zucchini Noodles with Shrimp – What you need for this dish is plenty of spiralized zucchini noodles and shrimp. Add a lot of garlic or cooking wine to your shrimp. Herbs and spices will add more zest and aroma to the shrimp dish. Or if you are a shrimp cooking aficionado, make your own shrimp a la cart to add to the zucchinis!
Low Carb Zucchini Noodles Alfredo – These zoodles will steal your heart! Or should I say, tastebuds. This variation of the zucchini noodles is low carb and Keto friendly. The sauce is rich like any Alfredo. But you will really enjoy the goodness that is within your green zucchini base.
Easy Zucchini Noodles Spaghetti Bowl
Nutrient-Dense Zucchini Noodles Breakfast Bowl –If you are looking for Gluten FREE and Dairy Free variety of past, here it is. Prepare your base, zucchini noodles. Add cubed cooked sweet potato, one over-easy egg on top of your zucchinis. Savor your breakfast bowl with an amazing avocado sauce. The avocado cream sauce is easy.
Place all these ingredients into food processor and pulse: 1/2 avocado, 1 garlic clove, 2 Tbsp olive oil, 2 Tbsp water. You’ll love your breakfast!
Zucchini Noodles with Tahini Sauce – This option is described below and you can print a recipe for your cooking experience. Tahini is rich in amino acids and fats that are great for your skin and hormonal system especially in menopausal women. Add tahini frequently in your diet to enjoy the benefits for clearer skin. Tahini boosts nutrient absorption in the body. What it means for us is that we experience less hunger and cravings. Fiber is another key benefit that comes with tahini.
2 Tbsp coconut sugar (use any sugar available in your pantry; I use coconut sugar as it is low glycemic)
3 Tbsp soy sauce
1 Tbsp rice vinegar (or use any vinegar at hand)
1/2 tsp ground black pepper, optional
Instructions
Whisk together all ingredients for Tahini sauce. You can thin sauce with a bit of hot water. I use it as it is, but some people enjoy it thinner.
Toss the spiralized vegetable noodles into a big bowl and sprinkle with the Tahini sauce. Adjust the seasoning to your taste. Garnish with sesame and serve.
You can make this dish all vegetarian or add your favorite proteins like fish, chicken, meats.
You can make this zucchini dish totally vegetarian or add your favorite proteins to a plate you serve. We have this salad as our lunch or spruce it up with fish or beans for dinner. This recipe is an absolute delight for any time of the year. Enjoy an abundance of vitamins, trace minerals and omega-3 amino acids in each zucchini recipe. This squash is bursting with flavor when you add your herbs, spices and different sauces. Be creative and eat this vegetable raw, baked, grilled or in a delicious vegetable stew that is good for the entire family and is included into the menopause diet.
