- 1 cup Quinoa
- 1/2 Avocado Ripe
- 1 Baby Cucumber
- 5-6 Grape Tomatoes
- 1/2 cup Carrots
- Onions to taste
- Garlic to taste
- Spices to taste
- Basil Extra Virgin Olive Oil (I love cold pressed and organic)
- Lemon Juice to taste
- Cut up cucumbers and avocado.
- Mix all ingredients in a deep bowl.
- Sprinkle with yummy basil olive oil and lemon juice.
