This cancer-preventive dessert is loaded with protective antioxidants. You can find matcha, a finely ground green tea powder, in most natural foods stores or specialty market.
I used yogurt, but you can substitute coconut milk for a vegan version. Using unrefined cane sugar as the sweetener improves the texture, but honey works just fine.
- 2 cups plain or vanilla low-fat yogurt
- 1/2 cup Manuka honey (you can substitute for unrefined cane sugar)
- 3 Tbsp finely grated fresh ginger root
- 1 Tbsp matcha green tea powder
- Combine yogurt, honey or sugar, ginger and matcha in a blender; puree until very smooth and creamy.
- Transfer mixture to an ice cream maker, and process according to manufacturer’s directions. Serve immediately for soft serve, or freeze until firm, 1 to 2 hours, before serving.
