Lentil, Zucchini and Tomato Tart With Feta

Ingredients

  • 1 pkg puff pastry, pre-rolled sheet
  • 2 Tbsp (30ml) olive oil
  • 2 small zucchini, sliced
  • 2 garlic cloves, minced
  • Pinch of salt and black pepper
  • 3/4 cup (185ml) cooked red lentils
  • 1/2 cup (125ml) feta cheese, crumbled
  • 4 green onions, light green and white parts only, thinly sliced
  • 1 Tbsp (15ml) mayonnaise
  • 1 Tbsp (15ml) Finely chopped fresh dill or other herbs you enjoy
  • 1 Tbsp (15ml) lemon zest
  • 1/4 tsp (1ml) ground black pepper
  • 1 cup (250ml) cherry tomatoes, cut in half

Instructions

  1. PREHEAT oven to 400F (200C). Unroll puff pastry and slide onto parchment lined baking sheet. Refrigerate while preparing filling.
  2. HEAT oil in a large frying pan and saute zucchini over medium high heat for 5 minutes. Stir in garlic and cook another 2 minutes. Season with salt and pepper. Let cool.
  3. STIR together in a large bowl: lentils, feta cheese, green onions, mayonnaise, dill lemon zest, and pepper.
  4. BAKE for 20 minutes. Remove from oven and top with cherry tomato halves. Bake for another 10 minutes.
  5. REMOVE from oven. Cut into even wedges. Drizzle each piece with olive oil if desired, garnish with fresh herbs, and season with sea salt and black pepper.

      Real ingredients and very little time to prep and cook.
      I love it and put it into my recipe rotation (I have over 200 in my book that take little time to prep and cook and are favorites for my family.) I still add recipes to this folder, as there are so many great ones out there!

      It is very easy to involve your kiddos!
      Mine make it all by themselves. I just make sure all is safe and sound. Sometimes they like to experiment and those ideas when it involves tools and oven call for my attention!

      You can just add those tomatoes after the whole tart is ready to be served. Fresh has its own value!

      The list seems to be long, but the majority of ingredients are like salt and pepper and lemon zest.
      But the recipe is really simple to make, and fast, too.
