Ingredients
- 1.5 lbs skinless chicken breast, cubed
- 1/3 cup cornstarch
- 1 tsp black pepper
- 1 tsp salt
- 4 Tbsp olive/avocado/grapeseed oil for cooking
- 2/3 cup cashew or pine nuts, raw or roasted
- 1 red bell pepper, cubed
- 1 zucchini, medium to large
- 1/2 cup soy sauce
- 1/2 cup water
- 3 Tbsp honey
- 2 Tbsp hoisin sauce
- 1 Tbs garlic, minced
- 1 Tbs ginger, grated
- 1 Tbs dried red pepper chili flakes
Instructions
- In a large bowl, mix chicken pieces with cornstarch, salt, black pepper until well-coated.
- In a large pan, heat oil and cook chicken until it's cooked through.
- Add vegetables to the chicken and saute about 4-5 minutes.
- Pour sauce over chicken and veggies and cook until sauce thickens, about 3 minutes. Fee free to dilute or chicken the sauce to your taste.
- Serve with your favorite sides like fried rice, noodles, dumplings.

This is brilliant, one of those easy meals you need on a busy weeknight. I’ll definitely give it a try!
My daughter is such a picky eater. It can make finding meals for the whole family so tricky. But thankfully fried rice and chicken are on the list of things she’ll eat without complaint. Ling Ling makes dinner happen without a struggle, and that’s huge in this mom’s world.
Can a dish like this be customized for vegetarians too? Maybe replace the chicken with mushrooms or something. Just a thought.
