This colorful recipe can be used for your lunch or dinner menu. Either way, it is filling and very nutritious. Fiber and protein in beans can easily be used as a substitute for any meaty option. The veggies provide their own gallery of nutrients like minerals and phytonutrients, with antioxidant properties. And veggies are fibrous, too.
Share this colorful food option with your family! Always keep your mind open to veggies that are handy to you at the time of meal preparation.
