Fruit Pizza Dessert with Grilled Almond & Lentil Crust

Ingredients
- CRUST
- 1 cup (250 ml) toasted almonds
- 1cup (250 ml) cooked (canned) lentils
- 3 Tbsp (45 ml) honey
- 2 tsp (10 ml) lemon juice
- 2 tsp (10 ml) lemon zest
- 1 tsp (5 ml) vanilla extract
- 1/2 cup (125 ml) coconut flakes
- 1 Tbsp (45 ml) coconut oil, melted
- TOPPING
- 1 pkg (8oz/250 g) cream cheese, room temperature
- 1/4 cup (60 ml) coconut sugar
- 1 cup (250 ml) fresh blueberries or raspberries
- 1 tsp (5 ml) vanilla extract
- 3 cups (750 ml) fresh fruit of choice like strawberries, blueberries, peaches, bananas or starfruit)
- Use mint or basil for garnish
Instructions
- 1. ADD almonds, lentils, honey, lemon juice, zest, vanilla, and coconut flakes into the bowl of a food processor and pulse together.
- 2. SCRAPE the sides down using a spatula and pulse again until lentils have broken down.
- 3. TRANSFER contents to a mixing bowl and stir in coconut oil until fully incorporated. Press mixture flat into a parchment lined pan (6 inch/15 cm square or round). Freeze for 2 hours.
- 4. WHISK cream cheese and sugar in a separate bowl until sugar has dissolved. Mix in blueberries/raspberries until they until they break down and add vanilla. Chill for 10 minutes in refrigerator.
- 5. REMOVE crust from the freezer and spread cream-cheese-and-fruit mixture evenly on top. Cut into wedges of desired size.
- 6. GARNISH with cut fruit and berries to enjoy.

That looks so good! I’m not a wrong person per se but I love raw fruit. This dessert looks easy to make and when I go on vacation a couple weeks with friends this would be a great one to bring with.
