I add vegetables to my cheesy version of Pressure Cooker Mac And Cheese. One of the favorites is cauliflower. This cruciferous vegetables is rich in anticancer properties and provide ample fiber, vitamin C, potassium, folate, choline. What I love about this Pressure Cooker Mac and Cheese is the amount of liquids that can be varied without spoiling your homemade recipe. I usually use a vegetable broth with my recipe. But you can use whatever is available in your pantry: Chicken broth or Water!
You Can REHEAT Mac and Cheese Later, Too!
If I cook a bit more than my family can eat, I store my delicious Pressure Cooker Mac and Cheese in a glass container in the fridge. I will reheat it the next day either in a microwave or in a pan. I would add a few spoonfuls of vegetable broth or water to both.
If you like, you could add some olive oil or ghee to the heated version in a pan. If you love milk or cream, add a bit of these ingredients to the heated leftovers. I love a pan version of my reheated Mac and Cheese recipe! Extra liquid helps to break up the starches and heat your macaroni heat evenly and nicely.
How Long Do You Cook Macaroni in Pressure Cooker?
The best thing for a quick lunch or dinner is that Pressure Cooker Mac and Cheese are ready in 4 minutes! That is four minutes of cooking inside the pressure cooker. Allow a few minutes for gathering the ingredients and for the pressure cooker to build up the heat. I would say, your final Mac and Cheese recipe will be ready in a total of 15 minutes MAX!

This homemade Pressure Cooker Mac and Cheese recipe is easy and fast. Cooked with cruciferous vegetables, this recipe offers fiber, vitamins and minerals to the daily diet. Kids will LOVE IT!
Ingredients
- 16 oz pasta: your choice of elbow pasta or any other type
- 4 cup vegetable broth or substitute with water or chicken broth
- 1 cup milk or substitute with half-and-half
- 4 oz sharp Cheddar cheese
- 4 oz Monterey cheese
- 2 oz Parmesan cheese
- 1/2 tsp salt
- 1 Tbs Dijon mustard
- 2 Tbs Butter or Ghee
- Black pepper to taste and is optional
Instructions
- Place all ingredients into a Pressure Cooker. Stir them carefully to mix all ingredients together.
- Cook on HIGH for 4 minutes.
- Allow fast release or slow if you have time on hand.
- Enjoy your Mac and Cheese immediately!
Notes
I use more pepper on mine Mac and Cheese. My family loves French Onions on theirs! It is especially yummy during the Thanksgiving and entire Holiday Season.
