A delicious lunch recipe that is full of flavor and freshness

For The Salad
- 4 avocados, sliced
- 14 oz canned chickpeas, drained and rinsed
- 1/4 cup chopped green onions
For The Dressing
- 2 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 Tbsp chopped ginger
- 1/2 tsp ground cardamon
- 1/4 tsp ground cumin
- 1/8 tsp Spanish paprika
- 1/8 tsp salt
Instructions
- To make the dressing, combine the olive oil, lemon juice, spices, and salt in a small bowl and mix well.
- Combine the avocados, chickpeas, and green onions in a large bowl and toss gently.
- Just before serving pour the dressing over the salad and toss lightly to coat.
