Every season comes with its own spirit for celebration. Whether it’s a nice warm and sunshiny weather, welcoming coolness of local rivers and lakes, or seasonal yumminess of fresh fruit and vegetables and dishes made out of them.
Though we live in the society that almost every grown fruit and vegetable is available all-year-round, we still yearn for some fresh authenticity of local crops.
Take advantage and prepare your daily food with at least one ingredient that you can buy locally.
Without ado, here is an amazingly tasteful Tomatoes And Asparagus Salad.
Ingredients
1.5 lbs tomatoes, coarsely chopped (venture out for yellow tomatoes as well!)
3/4 cup chopped scallions
1/2 cup black olives, chopped
4 tsp soy sauce
1 Tsp fresh coriander, finely chopped
1/2 tsp chili sauce (or any sauce you really enjoy)
1 lb Asparagus, cooked
Preparation
• In a bowl, mix the tomatoes, scallions, olives, soy sauce, coriander, and chili sauce. Cover and refrigerate until the mixture is very cold.
• On individual plates, distribute the reserved tomato salad over a bed of cooked asparagus.
• Serve.
