Fish And Cumin Skewers Recipe

Summer is full of delicious vegetable dishes that could be served individually or as a side to the main dish.

It’s up to you to delight yourself with squash, artichoke, zucchini or bell peppers.

Whatever your choice is, any of the veggie delights would be a perfect pairing with this simple, yet amazingly tasty fish dish.

The skewers would only contribute to a much fuller taste! Use herbs from your pantry or on your regular cooking shelf to add to this recipe. Be creative!

Ingredients
2 Tbs Argan oil (or extra-virgin olive oil)
1.5 lb White fish fillets (pick your favorite: seabass, hake, sole) , cubed
2 tsp ground cumin
1 garlic clove, chopped
1 Tbs fresh coriander, chopped
1 tsp freshly ground pepper

Preparation
• In a bowl, mix the oil, garlic, coriander, cumin and pepper. Add the fish cubes and let it stand for 30 minutes (a few hours would be perfect, as it would allow the spices to seep into the fish)
•  Thread the marinated fish pieces in the skewers and place on an oiled oven tray. Cook under the oven grill, turning frequently, for about 7 minutes (depends on size of fish cubes)
• Serve warm with cool bubbling mineral water
